With lunch in mind, let’s make it magical and delicious by relying on leftover pasta from the day before. This is a recipe that my grandmother has always made since I was a little girl.

A recipe that I have fond memories of and that I suggest every time I have the opportunity, for several reasons: firstly, because it’s a shame to waste a good plate of pasta, and secondly, because reinvented like this is not just delicious… but an unforgettable gastronomic experience .

Leftover pasta, recipe for the next day

It often happens that pasta is left over from lunch and dinner, sometimes it is prepared extra so that it can be reheated the next day and served on the table as if it had just been made. However, today I thought I would suggest my grandmother’s recipe, the one she often uses to make omelettes. Below are the ingredients you will need for 4 people:

leftover pasta (from 200 to 350 grams with all the spices),

6 eggs,

150 grams of Parmesan,

100 grams of provolone,

100 grams of bacon,

1 onion,

spices to taste

olive oil.

How is a pasta omelette prepared?

We start preparing the omelette by frying the onion and bacon, fry them well in a pan and put them aside in a bowl, pouring over all the oil and fat that melted during cooking.

In the same bowl, we also put the pasta we had left over from the previous day and also the cubes of provolone cut into pieces, season everything with a large amount of oil and proceed to the next step. Put the contents of the eggs and grated cheese in another bowl, you can enrich the omelette with a glass of milk, but it is not necessary. After adding the Parmesan, we beat the eggs with a fork, but if we wanted to soften the omelette, we use an electric beater to obtain a foamy and very thick mixture. Then add a little thyme and parmesan and a spoonful of oil to the eggsthen add the pasta and mix until you have a dough that can be fried.
