With a roll of shortcrust pastry, you can make a fantastic Christmas finger food in just 10 minutes, but that doesn’t mean you only have to make it at Christmas.

When you run out of ideas, just take a roll of puff pastry or shortcrust pastry and your imagination will show its best qualities. We have to prepare an appetizer or an aperitif for Christmas and we don’t want to follow the usual ideas that come to mind for everyone. It is clear that we need some specific ingredient that is not the usual cooked ham and the usual mozzarella. We certainly have a lot to choose from, but I would combine smoked meats and vegetables, which as always turn out to be a perfect marriage, especially when it comes to rustic dishes.

For every recipe, I have to say that the mushrooms are perfect. Just wash them well and you’re done, also because cooking is really fast. As a smoked meat, as I said, I would not go for the usual cooked ham, but this time I would play with capocollo, which is more tasty and not the usual raw one either.

Short pastry roll with scamorza capocollo and mushrooms

let’s see what we can add, I’d keep it simple, I’d actually use scamorza because it’s less full of milk and more compact instead of mozzarella.

Of course, we start by preparing the mushrooms by washing them well and cutting them into slices. Take a non-stick pan and fry a clove of garlic in a few turns of oil. As soon as the garlic turns a little brown, add the mushrooms and start to cook them, covered, on a medium flame. Turn them occasionally so they don’t stick to the bottom and add a few spoonfuls of water if necessary. After washing well, chop the parsley and when it is almost cooked, add it to the pan with the mushrooms and, if we like, a little chili pepper, which is an added value for those who like it. Once the mushrooms are cooked, set aside to cool.

How to make a shortcrust pastry roll with capocollo, mushrooms and scamorza

We take the roulade and be careful not to use it when we took it out of the fridge a short while ago, otherwise it might break. We open it and leave it on the baking paper and start filling the capocollo, scamorza and put the mushrooms on top and roll it up using the baking paper. Place on a tray, always with paper, and bake at 180° for about 12 minutes. Be careful because the roll cooks very quickly, so if you need to reduce the time, do so. The same, if it doesn’t seem well cooked, increase the cooking time by a few minutes. Remove from the oven, let cool slightly and cut into slices. Your aperitif or appetizer is ready and I assure you that the idea is really great.
