The process of making these eggs is definitely simple and quick. Take a large non-stick pan and fry two peeled and pressed cloves of garlic in extra virgin olive oil.
When it gets colored, we can add it tomato pulpor or peeled tomatoes and let them cook over medium-high heat without adding any liquid. Season the sauce with salt, fresh basil leaves and dried oregano and let it simmer for at least 15 minutes.
Now it’s the turn of the main ingredient, the one that gives the dish its name. Crack the eggs directly into the pan, one at a time. The only trick we need is to space them far enough apart so that the egg white cooks evenly.

We lower the temperature slightly and cook the eggs for a maximum of 6, 7 minutes. The yolk at the end should still be a little soft, not compact. When they are almost done, we add them grated parmesan and pepper, according to our taste.
